Transforming the Food System We Have Into the One We Need
 

Can innovation reshape what the market makes possible?

Today’s food system achieves remarkable scale, variety, and convenience—yet nutritious foods can remain less affordable, accessible, and appealing, particularly for lower-income communities. Why do promising innovations and policies so often fail to produce lasting change?
 

Drawing on research published in Nature Communications, Jeroen Struben will examine the market dynamics that shape the production and consumption of nutritious food. His work identifies three interconnected forces—industry capabilities, consumer consideration, and supporting systems and institutions—that can either lock existing patterns in place or become engines of transformation.
 

Using a system dynamics simulation, Jeroen will demonstrate why isolated interventions such as consumer education, subsidies, improved access, or individual product innovations often generate limited or temporary results. He will then explore how coordinated innovation across business, government, and society can produce more durable, equitable change.
 

Learn from MIT alumnus Jeroen Struben, PhD, a system dynamics scholar and lead author of the featured Nature Communications study. His research examines how markets emerge, become established, resist change, and ultimately transform.


Jeroen will connect systems thinking with practical questions of strategy and innovation: how organizations identify leverage points, how policies interact with market behavior, and how coordinated action can move socially beneficial innovations from niche adoption toward lasting impact at scale.

EVENT FEATURES

Live Simulation and Scenario Exploration

This is more than a presentation of research. Jeroen will run scenarios in his simulation as he discusses the findings, allowing participants to see how food markets respond to different strategies over time.
 

Together, you'll explore questions such as:
 

  • What happens when companies invest primarily in premium, nutritious products?
     

  • Can subsidies or consumer education create lasting change on their own?
     

  • Why might a successful innovation unintentionally widen disparities?
     

  • Which combinations of innovation, access, affordability, and policy create the strongest results?
     

  • What allows a promising food category to move from a specialized niche into the mainstream?
     

Participants will help shape the exploration through live polls, discussions, questions, and suggested scenarios. The session will conclude with an interactive Q&A connecting the model’s findings to practical challenges in food, business, policy, and market transformation.

Learning Objective

Participants will learn how feedback loops, time delays, consumer behavior, business investment, infrastructure, and public policy interact to shape food-market outcomes.
 

By exploring the simulation, participants will develop a deeper understanding of why well-intended interventions can underperform, generate unintended consequences, or benefit some populations more than others. They will also learn how system dynamics can reveal leverage points and inform more coordinated strategies for transforming complex markets.

Participatory Activity

Throughout the program, participants will be invited to:
 

  • Respond to live polls about food-system priorities and intervention choices
     

  • Suggest strategies for testing in the simulation
     

  • Compare expected outcomes with the model’s behavior
     

  • Discuss trade-offs involving nutrition, affordability, access, innovation, and equity
     

  • Ask questions during a live Q&A with Jeroen
     

  • Consider how the lessons apply to other markets undergoing transformation
     

The simulation provides a risk-free environment for challenging assumptions, exploring possible futures, and observing how decisions can cascade through an interconnected system.
